Hiya,
I discovered this recipe today whilst wanting a taste of Italy; so I decided to try and make a pizza that was quick, cheap and easy to make - but most of all it tasted delicious!
This recipe makes one medium size pizza which was the perfect size for a lunch for one but if you are catering for more people then you can always double the recipe for a dinner for two and so on.
Ingredients:
- 120g self-raising flour for a fluffy base; or plain flour for a crispy base (gluten free)
- 1 tsp Baking powder
- Pinch of salt
- 1/2 Tbsp of oil
- 70ml water
- Any of your favourite toppings
I used: tomato puree, a mixture of cheddar and red leister cheese and sliced tomato but you can use anything you like!

Method:
1) Combine the flour, baking powder and salt in a bowl and mix together.
2) Then add in the oil and add the water gradually - mixing after each addition of water.
The dough should be soft but not sticky (you may need to add some extra flour or water depending on the consistency)
3) Flatten the dough out into a circular shape and place on to a hot frying pan and cook until the bottom is a light golden brown.
4) Then flip over to cook the other side.
5) Once flipped over, add your toppings.
6) Allow the cheese to melt and the bottom of the pizza to turn a golden brown. If the bottom of the pizza is turning brown but the cheese hasn't yet melted, place a large heatproof plate on the frying pan to act as a lid and this will allow the cheese to melt quicker.
7) Once cooked, remove from the heat and enjoy!
