Firstly I want to welcome you all to my journey of having The Gluten Free diet.
I want this post to help you gain an insight into my journey so far as a self-diagnosed coeliac.
I'm a fun loving, creative food fanatic and have been following the gluten free diet for 2 years. In those 2 years I've struggled to find food for an affordable to price in shops which as a student became quite an issue so I've have had to turn to recipes online. However most of the recipes online use ingredients no one has ever heard of; let alone has in their kitchen or the recipe has a habit of not actually working because as you may know using gluten free ingredients in 'normal' recipes very rarely works out well.
My aim is to provide affordable, easy but interesting and healthy recipes for those following the gluten free diet (whether that be for health benefits or allergies). So I want to be able to provide baking recipes as well as meal ideas that aren't overpriced or unhealthy but they come with the ease of convenience food or shop bought products.
My journey following a gluten free diet began in summer 2018 when I started feeling ill. I was having persistent headaches, cramps just below my ribs, bloating and the feeling of being sick. So with these symptoms lasting over a week I went and visited my GP. She took a urine test and told me that it wasn't diabetes an she gave me some antacids in the hope it settled my stomach. After 2 months, I still had the same symptoms so returned to my doctor's surgery and and had more blood tests which this time was to check for any allergies. This test came back negative and after some extensive research, I discovered that coeliac disease doesn't always show up on blood tests and that the best way to find out if you are coeliac is by having a gastroscopy which I couldn't get booked in for. So then I went and saw a nurse who told me to try cutting out certain food groups and see if the symptoms persist. Starting with products containing gluten; my symptoms cleared up and from this I have self diagnosed myself as gluten intolerant.
