So I know what you're thinking, shouldn't it be hot cross buns but no I haven't made a typo as today I'm going to be sharing my recipe for hot cross biscuits.
I'm going to be showing you a recipe that I discovered whilst making hot cross buns. Amid this corona crisis we didn't have any bread flour so I turned to using plain flour and although I didn't get hot cross buns in return; I got hot cross biscuits instead which were a lovely festive treat that went down a storm in my house.
Ingredients
For the batter:
- 350g plain flour (gluten free)
- 1.5 tsp quick action yeast
- 75g caster sugar
- 2 tsp mixed spice ( you can add any spices that you have to personalise to your tastes; e.g. nutmeg, cloves, cinnamon)
- 1 egg
- 200ml milk
- 75g butter, melted
- 75g currants
- 25g mixed peel
For the cross:
- 50g plain flour (gluten free)
- 4 tbsp water
For the sticky glaze:
- 20g sugar
- 2 tbsp water
Method
1) Put the flour, yeast, sugar and spices into a bowl and stir to combine
4) After proving, melt the butter and put to one side to cool down slightly
5) Line a baking tray with baking parchment or oil the tray to stop the biscuits sticking
6) Add the currants, peel and melted butter to the batter and stir to ensure everything is well combined
7) Divide the mixture into 12 small piles on the prepared tray
8) Cover the tray and dough and leave to rest whilst you make the crosses and preheat the oven to 200°C, Fan 180°C, Gas mark 6, 400°F
9) For the crosses, put the flour into a bowl and slowly add the water a tablespoon at a time until it reaches a dropping consistency
10) Using a spoon or piping bag add the crosses to the top of each biscuit
11) Then put the biscuits in the oven for 15-20 minutes
13) To make the glaze, boil the water. Then add the sugar and water into a bowl and mix until the sugar has dissolved
14) Then using a pastry brush, paint the biscuits with the glaze to add a sticky sweetness.
15) Transfer to a wire rack and leave to cool; then enjoy!
